Guilty pleasure or the perfect meal? Shrimp fried rice uses easy to find ingredients, which you may already have stocked, and is easy to put together. Fried rice is perfectly at home as a side dish or the main course. Although this recipe is for shrimp fried rice, you can easily switch it out for another protein. Enjoy!
Tips for Making Shrimp Fried Rice
Best to make rice the day before, then stash in fridge. If you make it the same day, just spread on a sheet pan and pop it in the freezer for a while. You want the rice to be a dry for this application. Here are a few more tips for success.
- Prep all ingredients first. The cooking process move quickly.
- Use fresh shrimp if available. Frozen shrimp needs to be thawed first. Any size shrimp will work.
- Cut recipe in half for a smaller portion or if just using as a side dish.
- Switch it up with your favorite protein, such as chicken, pork, tofu, or Spam. Simply adjust the cooking time in step 2.
Ingredients for Shrimp Fried Rice
- 3 T. unsalted butter, divided
- 4 large eggs, lightly beaten
- 1 lb. shrimp, chopped (If frozen, thaw first)
- 2/3 cup frozen peas and carrots mix
- 3 T. white or yellow onion, finely diced
- 2 large green onions, divided, sliced
- 2 t. fresh ginger, finely minced
- ¾ t. garlic powder
- 4 cups cooked rice, chilled
- 2 T. toasted sesame oil
- 3 T. soy sauce (or sub with tamari or coconut aminos)
- Toasted sesame seeds (optional topping)
- Green onion, sliced (optional topping)
Directions for Making Shrimp Fried Rice
- Add one tablespoon butter to a large skillet or wok set over medium-high heat. Add eggs and cook, stirring and chopping with a spatula continually, until cooked through, approximately 2 minutes. Transfer eggs to a bowl and set aside.
- Add second tablespoon of butter to pan. Add shrimp and cook, stirring constantly, for 1 minute. Transfer shrimp to the bowl with the eggs. (Shrimp will not be fully cooked at this point).
- Add remaining butter to pan, along with the peas, carrots, onion, and white portion of green onions. Add fresh ginger and garlic powder. Stir to combine and cook until vegetables are crisp tender, approximately 2-3 minutes.
- Add rice, sesame oil, soy sauce, and green part of onions to pan and stir to combine. Return shrimp and eggs to skillet and cook, stirring continually, until heated through and all ingredients are thoroughly combined, approximately 1-2 minutes.
- Remove from heat and serve immediately topped with additional sliced green onion and toasted sesame seeds, if desired. Enjoy!
